Spinach and Microgreen Gnocchi

Ingredients:

  • 500g (about 1 lb) store-bought or homemade gnocchi
  • 2 cups fresh spinach, washed and roughly chopped
  • 1 cup assorted microgreens (e.g., arugula, radish)
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup pine nuts (optional)
  • Salt and pepper, to taste
  • Zest and juice of 1 lemon
  • Red pepper flakes (optional, for added heat)

Directions:

  1. Cook the gnocchi according to the package or recipe instructions. Once cooked, drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for about 1 minute or until fragrant.
  3. Add the chopped spinach and cook until it’s wilted, about 3-4 minutes.
  4. Add the cooked gnocchi to the skillet, stirring gently to combine with the spinach and garlic.
  5. Stir in the microgreens, allowing them to wilt slightly from the heat of the skillet.
  6. Season with salt, pepper, lemon zest, and lemon juice. Mix well.
  7. Transfer to serving dishes, sprinkle with Parmesan cheese, and garnish with pine nuts (if using).
  8. If desired, sprinkle a pinch of red pepper flakes on top for a bit of heat.
